possibly a controversial contribution considering how damn good the original is, and don't know if it's already been mentioned, but:

Nouvelle Vague surely deserves a mention for some covers that rank, albeit in a different way, along with the originals (or am I just getting old?):

Anyway, I'm a sucker for the original almost always being the best. But here's some covers I think are better than the originals:

OK, not that hard to do better than Van Morrision, but this is just so much better. And obviously an not insignificant punk track.

Again, not hard to top Tears for Fears, but this owns the original.

It might be far from the Pogues' best track, but is simply the definitive version of Dirty Old Town for me.

Likewise probably a definitive version for me - punk diy makes a song that has nothing really more than a good baseline into something good.

The Clash, I Fought the Law probably deserves a mention - love 'em or hate 'em, The Clash so owned this most peeps don't even realise it's a cover.

I also like Chumbawamba's parody of The Beatles' Her Majesty. Yeah ok, not a cover per se.

Back in the day I liked The Angel's cover of We Gotta Get Out Of This Place better than the original, but I suspect I got over that

And since I'm half drunk I'll admit to enjoying to Lennon's Jealous Guy once apon a time, and that Roxy Music's cover owns the original.

PS - whoever posted Celtic Frost - Mexican radio, cheers - I'd not heard of them before if probably wouldn't have were it not for this cover of a quirky new wave track I though no one else liked.

Oh hell naw for Gary Jules. His version is just a glib yawnfest and without the backing the original has to build the atmosphere =\
