Just bought a crappy old Galaxy; what are people's top apps and why?

Aldiko is good for ebooks
ADW is a real nice launcher if you've got an ugly interface and has loads of customisable skins.
I use plume for twitter.
Clockr for a minimalist clock.
AstridTasks is a pretty decent task manager.
The winamp player is decent for music but I've also heard lots of good stuff about poweramp.
A Comic Viewer for reading comics on your phone. Mean on the train.

Perfect Viewer is the best comic app, but if you're reading comics on a phone you may as well just punch yourself in the dick.

there's an android client for TeuxDeux called Tehda which is great. it costs a couple bucks but worth it.
If you don't use TeuxDeux, consider it - pretty good task manager. www.teuxdeux.com

I used to use TeuxDeux, but another option is Evernote, which I'm finding a bit better for me. TeuxDeux is more stripped-down, while Evernote chucks in loads of facets, so it's whichever suits you best.
