Vegan Hangi

I need to prepare a vegan hangi at a marae in a couple of weeks. Any ideas apart from the obvious veges? I dont think tofu would work, would it? Maybe tempeh?

Has anyone else tried to do a vegan hangi?

i have some ideas...

a diced potato/kumara, broc and watercress medley

for other vegies chuck rosemary branches in there, do a bag of stuffing too

green bananas, cashews, apricot and marinated tofu in a roasting dish

wrap things like squash/marrows in banana leaves with a savoury mushroom/yeastflake sauce to serve.

liberal use of rock salt and freshly ground pepper.

whole tomatoes wrapped in tinfoil with basil stuffed in, just cut the tomato in a crosshalfway thu, jam in the basil, dont forget s&p.

stuffed capsicum, eggplant whatever, wrapped in foil and/or banana leaves

thats what id do anyway

i've always wanted to try gluten done in a hangi. buy gluten flour, mix to stiff dough with water, pre cook by boiling then treat as the hunk of protein it is. makes awesome roasts so don't see why it wouldn't go well in a hangi.

not hangi stuffing, you could make it from couscous or quinoa

I've bloody awesome vege stuffing out of hangis- it's usually cooked seperate, Soooo good.
That other stuff sounds good too Phil. Reminding me I haven't had breakfast yet...

Or just get some gluten steaks from blissful or somewhere simalar, so long as ya season that shit its mean as.

Not really. Bury food in dirt. Food tastes slightly of said dirt afterwards. Success.

You can actually steam tofu so it might work alright. I'd recommend wrapping it separately with garlic, mushrooms and some seasoning.

mean thread, i fully wanna do a vegan hangi, i dunno why i like cooking vegan food so much, but whatevers.
