Banana & Dark Mocha Muffins

will also comment on what they taste like cold - having only eaten warm ones straight out of the oven about 10 minutes ago.

they were quite yum i must say. quite yum indeed.

recipe is as follows;

Dry;

1 1/2 cups of flour
1/2 cup of sugar
2 teaspoon baking powder
1/4 teaspoon salt (optional)
2 teaspoon cinnamon
1 block or 3/4 a block of Dark Mocha Chocolate cut into moderate size chunks.


Wet;

1 cup soy milk
1 banana (when i make it i add maybe another banana)
3 or 4 tablespoons margarine (melted)

IMPORTANT; preheat the oven to about 180 degrees.

- mix all of the dry together
- mash the banana, add the soy milk to the banana and mix together
- melt the margarine separately on the oven (or i guess microwave)

- slowly add the wet ingredients into the dry, i tend to add about half of the soy/banana mix before i start to work in the margarine.
- the mix will be quite runny and chunky looking - chunky cause of the chocolate . . . hopefully not because of clumpy dry flour !

- cook for 25 – 30 minutes. Once tops are brown they should be fine.


That mix will make about 10-12 apparently. I've only ever made double batches which make 20 or so muffins.

Also in regards to the marge i think i use way more than it says because i just chuck big chunks - like three large spoonfuls using like standard tablespoons not the actual sized ones.

The muffins come out pretty fluffy, like actual muffins (i say this because other muffins I've made have come out quite doughy).

sorry pert, had to be done. that custard was tasty but took like 20 minutes or something !

I had nice suprise yesterday, nicole had come round to bake at my place and made this recipe. Is good times, she put in quite a bit of chocolate which is all good.

Was... I put a pretty cover on it and now am off to the kitchen to cut off the chords. I thought it was stoopid initially... now its my favourite... apart from that little wooden rolly thing that I always stand on.
