Tofu questions!

Can you freeze it? Is it best to cook it up then freeze it?
How long is an open packet good for?


Anddd what are some great eash delicous ways to cook it??
How thickly do you cut it? etc

I've had it a couple of times before.. and have made it BAD... but from the asain takeaway it was soooo good so there must be a way haha!

I've decided to start eating better.. and tofu seems like a good thing.. just im hopeless that!

I lived in Taiwan for a few years and realized Tofu was actually edible. I've had aTofu burgers from an NZ shop and it tasted like cardboard between bread.

ok well it depends how you want your tofu...

the way I usually do it is to to slice up the tofu about 3-5mm thick then fry it until crispy, then I pour a marinade over the top and let it reduce. Marinade usually consists of garlic, beer, soy sauce, marmite, sweet chili sauce, or what ever

some people prefer to marinade their tofu prior to frying - cut it up first then soak it over night in marinade.

People also like to get some excess water out so it is tougher and soaks up more marinade, this is done by placing a heavy weight on the tofu for a while...

Once i've cooked my tofu I've left it in the fridge for about a week and it's still been fine.

You could probably freeze it after cooking, I *think* it would defrost ok.

Ive read in places that freezing tofu (once you take it out of the bag and get rid of water) can improve it's texture - make it more like meat. So I guess freezing tofu is ok.


If you are keeping opened tofu (prior to cooking), you should keep it in a dish of water so it doesn't dry out. It will probably keep for about a week maybe?

yeah you can freeze it before you cook it, when it's defrosting you can pick off some of the ice or absorb it with a paper towel or watever and it makes the tofu a bit less sloppy (as pert was talking about) it also soaks up more marinade this way

Im thinking the tofu with garlic/soy sauce sounds so damn good. and maybe put in some peanut butter.. SATAY!

Serve with rice right? Or noodles I suppose!

And oh yeah I was put off tofu from when I first became vegetarian.. like 4 years now.. my mum "cooked" some for me.. basically she just heated it up.. and put it in butter chicken sauce.

Almost raw tofu is not good.

ew yeah that would be gross haha.

I often save my peanut butter containers and make the marinade in that so to get the remaining peanut butter off. satay tofu is yum.

You can put the tofu with heaps of stuff...satay sauce, in a pasta sauce, curry, what have you.

satay tofu I usually serve on cous cous (coz I like it more than rice)

scrambled tofu for breakfast with seeds / nuts soy sauce and sesame oil.

Blend tofu and use it to thicken up curries. Bonus fun, don't tell you meat eating friends the sauce is made from tofu and watch them gulp it down then get outraged when the truth is told.

Little cubes fried with olive oil, plus olives and sun dried tomatoes in fresh pasta

Or just cheat and buy the tofu chunks that are pre-marinated for stir fries and curries. You can also use them in veggie skewers on the bbq.

Tofu Muffins:

Mix well in large bowl:
1/4 cup dried fruit (chopped)
1 cup wholemeal flour
1 cup rolled oats

Mix in a blender until smooth:
225g tofu
2 eggs
1 teaspoon cinnamon
2 teaspoons baking powder
1/2 a teaspoon baking soda
1/2 cup honey
1/4 cup oil

Pour blended ingredients into flour mixture, stir well. Fill oiled muffin tins, bake 215 c, 12-15 min.

(I left them for 15 min in a pre-heated oven and they came out a little dry so after about 12 min I would check on them to see if they're done.)

I had fucking good scrambled tofu for breakfast this morning (and yesterday too).

1 tomato, chopped into 2cm squared (ish) bits
1 smallish green capsicum, chopped to same size
garlic, chopped pretty small
200grams or so tofu, mushed up in your fingers till its in small bits
handful of sunflower seeds
handful of pumpkin seeds

fry all that together with some oil and HEAPS of soy sauce

at the same time, make a pack of Mi Goreng 2 minute noodles, one they're cooked, add them to the scrambled tofu

if you have them, chop up some soysauges and add them for deliciousness overkill (the cheap ones from meingen house in chch work great)

add more soy sauce, mix, add more soy sauce then eat :)

their eat in/takeout food is fucking arse now don't bother with that but they do have vege/vegan stuff for sale in the fridge/freezer that's all good but it's nothing you can't get at the asian food warehouses around town

Its in the freezer section of some of the Asian foods places-mmm, remember their offal chunks? They were so insanely good!
I blame binge meingin eating once a week with my sister for two years for my wheat allergy! Fuck,it was worth it though...

SO FREAKEN GOOD.

I've gone from "Tofu... *SHUDDER*"
to "OMG TOFU YUM."

You can freeze it after cooking it and just defrost/reheat like any other food.
You can also cut up raw tofu to whatever size you want, marinate it in whatever you prefer and then stick the slices in the freezer. Wait until they've frozen solid and then take them straight out and fry them. Don't defrost, just fry them frozen. They'll go all crispy on the outside. Just don't make the slices too thick or they'll stay cold on the inside (just like the last ever hot dog on a stick I ever ate. They cooked it from frozen and when I bit into it the inside was barely defrosted. Fucking gross!)
An open packet will keep for about 5-6 days if stored properly. Put it into a container with an airtight lid. Cover the tofu with water and seal the lid. You need to change the water daily or else it goes real manky within 2-3 days.
